Last-Minute 4th of July Desserts


Recently, Jeremy and I have been entertaining in our new home quite a bit. We love to host brunches and game nights and have guests over as much as possible. Sometimes I like to go all-out and bake fancy desserts to impress our company (I made this cheesecake a couple of weeks ago, and it took me almost a whole day to put it together!). But then, there are also times where I can’t devote whole days to slaving away in my kitchen….Here, I’ve composed 3 different super-quick-and-easy, last-minute dessert ideas for whatever you have planned today. Most-likely, you already have all of these ingredients in your kitchen, and I made each of these desserts in under 30 minutes—making these great choices for a last-minute potluck contribution or hostess gift. Last-Minute Dessert #1: Patriotic Jello Shots

I’m not even going to lie to you guys: these are SO easy and quick to make! I used strawberry Jell-o brand jello mix, and I added it to boiling water. Then I added some vodka and bakers sugar (it dissolves the easiest, but any sugar works) to make it less bitter. Then I poured the syrup into these little salad dressing containers that I use for Jeremy’s lunches. I popped them in the fridge and let them stiffen partially (about 5-10 minutes)–then I sprinkled some blue sugar crystals (the same kind I used for the strawberries, below) which dissolved and sank in halfway. Then I stuck them back in the fridge for a few more minutes. That’s it!

Rice Krispie Treats may have been one of the first recipes you learned to “bake” as a small child—because it only has 3 ingredients: Rice Krispies, butter, and marshmallows (or Fluff). Simple enough, right? All I did here, was divide the Original Rice Krispie Treat Recipe into 3rds; then I added a few drops of red food coloring to one batch, blue food coloring to another batch, and left the 3rd batch white. Lastly, I layered the three batches on top of each other in a deep 9 x 11 pan and pressed down on them with parchment paper to combine. I refrigerated the pan until completely cooled before cutting the Treats into squares. Voila!

IMG_4330-edit_Last-Minute Dessert #3: Bedazzled Chocolate Strawberries

Chocolate strawberries are one of those desserts that everyone is super impressed by, but they’re actually so simple to make—and it doesn’t take long at all to get them done. It’s as simple as melting chocolate, dipping in the strawberries, and laying them on a baking sheet to cool. You can melt chocolate in the microwave or using a double-boiler (I used a makeshift double-boiler by fitting a glass mixing bowl into a deep saucepan, so the bowl was suspended over the water boiling at the bottom of the saucepan). To make these babies a little extra patriotic, I dipped the strawberries in blue sugar crystals after dipping them in the chocolate. Go the extra mile by using white chocolate (red, white, and blue!)….I didn’t happen to have any, so I went with semi-sweet chocolate.
